"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Fresh or frozen salmon fillets, with the skin on one side
Lemon Juice
Lemon pepper seasoning
Butter

Directions:
Directions:
Preheat grill with tin foil covering the grates of the grill.. Good idea to double the tin foil.
Brush some melted butter over the top of the fillet... Sprinkle heavily the lemon pepper salt seasoning over the entire fillet. We use a lot ..Place the filet with the skin down so it is laying on the tin foil... and cover with tin foil... Please keep on eye on the fillets.. This is not the time to leave, have your guests meet you at the grill and you can talk sports their... Cooking fish or meat to the right doneness is important... I would start checking after 10 minutes..It really depends on the thickness and size of the fish... To check for doneness insert the fork prong's at a 45 degree angle.. Twist the fork gently.. If the fish resist flaking and is still translucent, it is not done.. If it flakes apart easily and is milky white, it's done. A dry and mealy texture indicates you were talking to much..
Know, when the filet is done, take your spatula and if you put it between the meat and skin of the filet, it will separate easily.. The best part is the meat of the filet is on a clean new plate, and all you have to do is roll the tin foil up with the skin stuck to the foil and throw it away.. Clean up is quick..
