2 lbs. summer squash
1 medium onion, chopped
1 cup grated cheese, divided
1 Tblspn. sugar
2 eggs, beaten
3 Tblspns. butter, melted
1 tspn. ground sage
Salt and pepper to taste
Paprika




Directions:
Directions:
Cook squash in a small amount of boiling, salted water until just tender. Combine all ingredients except half of the cheese and paprika. Pour into buttered casserole and place remaining cheese over the top, sprinkling with paprika. Bake in pre-heated oven at 350 degrees for about 25 minutes, or until mixture begins to bubble.

This was a favorite Thanksgiving dish. I used to make it when I was married and when our friends gathered together for Thanksgiving. Since my children never liked it, I stopped making it, but it is a great compliment to turkey and dressing dinner.
