2 small packages instant vanilla pudding
2 3/4 cups milk
1 teaspoon coconut extract
1 8-ounce container cool whip
1/2 cup flaked coconut, toasted
1 refrigerated pie crust

Directions:
Directions:
Bake pie crust according to pkg. directions; cool.
Lay coconut on a cookie sheet and let it toast in the oven.
Mix all ingredients but the coconut and pour into crust. Sprinkle coconut ontop.

12 oz. of coolwhip will make 2 pies. You can also put a little coconut into the pudding mix.
