2 1/2 to 3 pounds broiler-fryer chicken, cut up
1 bottle salsa, or Billy's Salsa recipe
2 tablespoons bottled lime juice, or fresh lime
1/4 cup chopped cucumbers
1/4 cup chopped green peppers
1 tablespoon cilantro

Directions:

Rinse chicken, pat dry with paper towel, sprinkle lightly with salt and pepper.
Grill chicken bone side up on an uncovered grill directly over medium coals for 20 minutes.
Meanwhile, combine salsa and lime juice. Divide out 1/2 cup to be used at grill, put the rest in a saucepan.
Turn chicken and grill for 15 to 25 minutes brushing often using only about 1/2 cup of the salsa mixture during the last 10 to 15 minutes.
In the saucepan combine the chopped cucumber, green pepper and cilantro with the salsa/lime juice. Bring to a boil, rem ove from heat and serve with chicken.
Serve with boxed Spanish Rice and a salad.
