1 ripe mango peeled and chopped, 1 medium yellow onion diced, 1 medium carrot peeled and diced, 1/2 medium Scotch bonnet seeded and chopped (this is a tropical pepper, but other very small hot peppers can be used), 2 cloves garlic chopped, 1 c. red wine vinegar, 1/2 c. pineapple juice, 2 T. Worcestershire sauce, 1/3 c. brown sugar packed, 1/2 tsp. salt, 1/2 tsp. allspice.

In a saucepan, combine all ingredients and stir occasionally for 25 minutes. The mixture will have a jam like consistency when ready. Allow to cool to room temperature. Put in food processor or blender and blend for 15 seconds. Sauce can be kept in refrigerator for several weeks.

This is good used on chicken and fish before and during grilling. We were introduced to this spicy-citrous taste during a visit to the Tahitian islands of Moorea and Tahiti.
