1/2 c. butter, 2 egg yolks, 1 tsp. lemon juice, 1/3 c. boiling water, dash of salt, dash of cayenne pepper, 12 thin slices of cooked ham, 3 medium size tomatoes halved crosswise, 12 eggs, 6 English muffins toasted and buttered.

Divide butter into thirds. Beat the 2 egg yolks with lemon juice in the top of a double boiler, then add 1/3 of the butter.

Place over simmering, not boiling, water, then cook, beating constantly until butter melts and sauce starts to thicken; add remaining two parts butter, 1 at a time, in the same way.
Beat in boiling water slowly; continue cooking and stirring, still over simmering water for 3 minutes or until mixture thickens; remove from water. Stir in salt and cayenne. (Hollandaise sauce will keep warm in pan).
Place the ham slices and tomato halves on top rack of the broiler pan. Broil, 4-6 inches from the heat for 5 minutes or until the ham is crisp and tomatoes are heated through.

While ham broils, pour enough hot water into a large skillet to make a 2 inch depth; salt lightly; bring just to boiling.
Break eggs, 1 at a time, into a cup and slip into water; simmer, basting often with water in pan, 3-5 minutes, or just until set; lift out with a slotted spoon; drain.

Place 2 English muffin halves on each of 6 serving plates; top with 2 slices of ham and a poached egg; spoon sauce over egg. Place a broiled tomato half on each plate.
