4 boneless chicken breasts
2 1/2 C marinara sauce
4 slices part skim mozzarella cheese
2 C fresh baby spinach leaves
4 T grated parmesan cheese

Directions:
Directions:
Preheat oven to 400 Spray baking dish with cooking spray and coat bottom with 1 C marinara sauce. Place one chicken breast between two sheets of plastic wrap. Roll with rolling pin until meat is 1/4 inch thick. Repeat with remaining breasts. Press 1/2 C spinach leaves on each chicken breast followed by slice of mozzarella cheese. Roll up tightly. Place each chicken roll seam side down and cover with remaining marinara sauce. Cover with aluminum foil and bake for 35 minutes. remove foil and continue baking for 10 more minutes. Garnish with grated parmesan cheese.
