1 1/4 cups sugar
1/2 cup vegetable oil
3 eggs
2 tsp. vanilla
2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
2 cups grated carrots
1/2 cup raisins
1/2 cup coconut
1 raw apple, peeled and chopped

Combine sugar, oil, eggs and vanilla in large bowl, set aside. In
another bowl, sift flour, salt, cinnamon, and baking powder; add
to liquid and stir just until moistened. Gently fold in carrots,
raisins, coconut and raw apple; spoon into greased (or paper
cup lined) muffin tins, about 2/3 full. Bake 350, 20 - 25 minutes
