fresh green beans, about 1/2 lb.
1/2 c. onion, chopped
1/4 c. vinegar
1/4 c. water
2 T. sugar
1 T. flour
1 tsp. salt
1/4 tsp. pepper
2 strips bacon

Directions:
Directions:
Blanch green beans until crisp-tender. Fry bacon until crisp; remove bacon; saute onion in bacon fat. Stir in flour, water, vinegar, sugar, salt and pepper. Bring to a boil, then add beans and crumbled bacon; heat thoroughly.

When I contributed this recipe to the original cookbook, it called for canned green beans. I don't think I have used canned green beans for ANYTHING in years so I changed this recipe to use fresh, which is much tastier.
