Crust:
2 cup flour with 1 scant tsp. of salt, 2/3 cup cold home rendered lard, 1/3 - 1/2 cup ice cold water.

Filling:
6-7 medium size apples, 1 1/2 cup sugar, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/3 cup flour.

Work the lard with fingers into the flour-salt mixture until the mixture becomes crumbly. Add ice water a little at a time until you can make it stick together to make a couple balls of dough, but not too much water. I let the dough sit covered for at least a couple of hours. Roll out 1 crust to cover a deep dish pie plate.
Peel and slice the apples thin. Mix the remaining dry ingredients in a bowl. Spread the dry mixture over the sliced apples and stir so the apples are evenly covered. Fill the crust lined pie plate with apple mixture. Press the rolled top crust into the side of the plate and trim the excess crust.
Sprinkle sugar over the top crust and dampen with milk. Use fingertips or pastry brush. Poke holes in the top crust with fork. Bake at 375 about 45 minutes or until it's golden brown.
I do not use fluted crust. I think it's a waste of crust.
