3 garlic clove
1 small onion finely chopped
2 med celery- chopped
1/4 C chopped green pepper
2 T olive oil

1 - 8 oz can Tomato sauce
2- 16 oz can stewed Tomatoes (save the liquid)
1/4 c white wine (optional)

2T chopped Basil
1T Oregano
1 t Hot Pepper Sauce
╝ t black pepper
1 T Worcestershire Sauce
1 T Creole or Cajun Spices

2 T corn starch

2 lbs peeled raw large Shrimp
You can use cooked and de veined.
4 cups steamed Rice

Directions:
Directions:
In a large skillet or pot, oil, and add flour, stirring constantly, until the roux is golden brown. SautÚ the onions, garlic, bell pepper, celery, cook until tender. Pour in tomato sauce, tomatoes, and liquid. Mix well. Remaining next 7 ingredients. Simmer for 20 minutes. Slowly add 2T cornstarch mixed with a little water to the sauce after adding the shrimp. Stir to thicken. Do not add all of this. A little at a time as needed. Stir often. Add more Cajun spice to taste.
Add shrimp. Simmer 15-20 minutes. Do not overcook shrimp.
Serve over cooked rice.

Note: The original recipe calls for a roux of bacon grease and flour. This is much healthier version and tastes just as good.
