1 cup rice, cook: will equal about 3 cups cooked rice.
3 TBSP peanut oil
1 teaspoon salt
1/4 teaspoon pepper
1/4 C. chopped green onions
1 1/2 TBSP soy sauce

Directions:
Directions:
In a large skillet or wok, heat peanut oil till very hot. Add slightly beaten egg and break pieces as they cook. Add cooked rice, salt, pepper, green onion and soy sauce.
With two wooden spoons, one for each hand blend ingredients well. and cook for a few minutes.
Fried rice may be prepared in advance and reheated, covered in microwave.I
