3 tablespoons butter or margarine
3 tablespoons all purpose flour
1/8 to 1/4 teaspoon salt
1/4 cup milk
1/3 cup shredded extra sharp cheddar cheese
3 room temperature eggs, separated

Directions:
Directions:
Melt butter in a heavy saucepan over low heat; add flour and salt, stirring until smooth. Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Add cheese, stirring until melted; remove from heat, and cool slightly. Beat egg yolks until thick. Gradually stir about 1/4 of hot mixture into yolks; add to remaining hot mixture, stirring constantly. Beat egg whites (at room temperature) until stiff but not dry; fold into cheese mixture. Spoon mixture into two 3 cup baking dishes. Bake at 350 for 20 minutes or until puffed and golden brown.
