1 pound bacon fried, crumbled
1 unbaked Pilsberry refrigerated pie shell
2 large onions
12 ounces swiss cheese Grated, Imported preferred
1 1/4 cups cooked, chopped spinach well drained
6 eggs slightly beaten
3 cups half-and-half
Salt to taste
Pepper to taste
Sprinkle parmesan cheese

Directions:
Directions:
Sprinkle bacon on bottom of pie crust. Saute onions in bacon drippings; place onions over bacon. Sprinkle cheese over onion layer; add layer of spinach. Beat together eggs and half and half. Season with salt and pepper. Pour mixture onto pie. Sprinkle with Parmesan cheese.
Bake 10 minutes at 450 then reduce heat to 300 and bake an additional 45 to 50 minutes or until custard is set.
