3 C. fresh basil leaves, rinsed
1/4 C. pine nuts, toasted
2 cloves garlic
1 tsp. lemon juice
1 tsp. black pepper
3/4 tsp. salt
1/2 C. olive oil
1/2 C. grated Parmesan cheese

Directions:
Directions:
Place basil, nuts, garlic, lemon juice, salt and pepper in bowl of food processor. Process until almost smooth, add oil and blend thoroughly, stir in cheese. Makes about 1 C. Never heat pesto - before spooning over hot pasta, add to the pesto a tablespoon or so of the hot water in which the pasta was cooked.
