2 boneless, skinless chicken-breast halves
1 med onion chopped
1 10 oz box, frozen, chopped broccoli
1 16 oz bag frozen broccoli cuts
2 lg eggs
1 10 3/4 oz can 90% fat-free cream of mushroom soup
1 c already shredded cheddar cheese
1 c already shredded swiss cheese
1/2 c reduced-fat mayonnaise
Cooking oil spray
1 c butter cracker crumbs, such as reduced-fat Club crackers

THIS RECIPE MAKES 2 CASSEROLES! ONE TO EAT AND ONE TO SHARE. Preheat oven 350. Heat oil in 12 in skillet on medium. Dice chicken breasts in 1/2 in pieces and add them to the skillet. When all the chicken is added, raise the heat to medium-high. Peel and chop the onion, adding it to the skillet as you dice. Stir and cook the chicken and onion until the chicken is just cooked on the outside, about 4 to 5 minutes. Place the chopped broccoli and broccoli cuts in a colander and rinse with warm water until the frozen block breaks apart. Set aside to drain. In a 3 qt or larger bowl, lightly beat the eggs. Add the mushroom soup, cheddar and swiss cheeses and mayonnaise. Stir well. Press the broccoli with the back of a spoon to remove as much water as possible. Add it to the bowl. Add the reserved chicken and onions, stir well. Spray two 1 1/2 qt casserole dishes with cooking oil spray. Pour the broccoli and chicken mixture evenly into each dish. Bake, uncovered for 25 minutes or until the top begins to brown and the sides bubble. Remove from the oven, and sprinkle the crumbs evenly on top of each casserole. Continue to bake 10-15 minutes longer.
