"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Pour olive oil first, then seasonings, then vinegar. Toss salad and taste until desired flavor is achieved. Add more ingredients accordingly.

I like to use mixed greens salad with garbanzo beans and sliced olives. Fresh garden tomatoes cut up are a great addition as well.

Sprinkle with feta cheese (optional).

Personal Notes:
This is one of those recipes that one never measures. You pour a little of oil and a little vinegar and spices and taste as you go. My Mom would prepare this with Red Wine Vinegar. If you run out of Balsamic Vinegar, try Red Wine Vinegar, but once you get used to the Balsamic, it's hard to go back to other vinegars. This is our family's standard salad dressing.
