meat 2lbs chicken or sausage or mix
onion 1 cup
celery 1 cup
1- 28 0z can diced tomatoes
1- 46 oz bottle of Spicy V8
4 cups rice
2 tbsp oil

Directions:
Directions:
Sweat meat, onions, and celery in oil till done. Add can of tomatoes and V8 (should add up till 8 cups liquid). Bring to a boil; add rice, stir once and cover. Simmer on low for 25 min. DON'T LOOK! Turn off heat. Let set for 10 min. with the lid on.
