1 c. mashed sweet potatos
1/2 c. sugar
1 beaten egg
1tbsp. butter, melted
1 c. milk
3 c. self rising flour
1 tsp. baking powder
1/2 c. shortening
*opt. 1-2 tsp. cinnamon (I add this!)

Directions:
Directions:
Pre-heat oven to 400.
Combine sweet potatos, sugar, egg, melted butter and cinnamon (if desired). Beat with fork until smooth. Stir in milk and set aside.

Sift together flour and baking powder. Cut in shortening until it resembles course crumbs. Make a well in center and add sweet potato mixture. Stir until well combined.

Turn out on a floured surface. Knead 10-12 times. Roll or pat out. Cut with a biscuit cutter. Place 1 inch apart on a cookie sheet. Bake for about 15-20 min.
