7 large baking potatoes
1 medium onion, diced
1 can original, diced Rotel
8 oz. sour cream
3/4 can cream of chicken soup
1 bunch green onions
8 oz. shredded cheddar cheese
1/2 lb. real smoked sausage, skinned and diced
1/2 stick margarine
salt and black pepper

Directions:
Directions:
Bake the potatoes on a cookie sheet at 350F for 90 minutes. Slice the potatoes long ways and scoop the meat from them into a bowl. Add all other ingredients and mix well. Before adding the Rotel, dump the can into a paper towel and squeeze the water out. Spoon the mixture back into the potato skins and bake until slightly browned.
