1 baked pie shell
2-4 pink or white grapefruit- cut into bite size segments ( Coarse grated best with grater). Drain very well and save juice.
1/2- 3/4 c. grapefruit juice
1 c. water
1/4 c. cornstarch
1 c. sugar
Dash of salt
Few drops of red food coloring
Cool whip

Directions:
Directions:
Combine grapefruit juice, water cornstarch, sugar, salt, and food coloring and cook in microwave until thick and clear. Spread some of thickened filling in bottom of pie shell. Mix remaining filling with reserved grapefruit segments (or grated grapefruit). Spread evenly in shell. Top with cool whip and refrigerate.
