3 to 4 sweet potatoes;
butter or oleo;
1/2 cup brown sugar;
1/2 cup orange juice;
1 tbsp corn starch;
Marshmellows.

Directions:
Directions:
Cook the sweet potatoes / covered in water, until almost done. Better if still a little firm. If sharp knife goes through - its done. Let cool and peel. Then slice 1/2 inch thick and put in buttered dish/ ovenware. salt & pepper each layer. In a skillet melt 3 tbsp of oleo and 1/2 cup of brown sugar. Add about 1/2 cup orange juice concentrate and tbsp corn starch. Cook until thick - pour over potatoes. May refrigerate for a day. To serve, bake @ 350 degrees about 1/2 hour. Add 1 cup or mini or regular marshmellows the last 10 minutes. Marshmellows are optional.
