(Grandma’s old standby recipe!)


6 large potatoes
1 small onion chopped
˝ tspn. Salt
˝ tspn. Pepper
1 tspn. Oregano

Directions:
Directions:
Peel and slice potatoes lengthwise and set aside.

Butter baking dish well. Put cut potatoes, onions, salt, pepper and oregano and sprinkle with a little water and mix well. (Add more pepper if not enough.)

Bake in 375 degree oven until golden brown.

This potato recipe goes back to Sicily. Grandma Cassara would make them every Sunday. First we would have pasta, then roasted or broiled chicken, salad, and of course, roasted potatoes. My Mom then made them for us during the week with a meat dish. Recently, in Italy, I believe they served these with almost every meal, even with pasta and bread included!
