1/2 lb dry baby Lima beans
1/2 cup red pepper, chopped
1 small red or sweet onion, chopped
1 medium cucumber, chopped
3 Tbs olive oil
1 packet Goya salad and vegetable seasoning
salt and pepper to taste

Directions:
Directions:
Soak beans and drain. Gently cook beans in 4 cups water until tender. Add more hot water if necessary. Drain. Toss beans with remaining ingredients in a medium bowl; cover and chill. Serve on salad greens, if desired. Serves 6
