6 - 8 white potatoes, boiled, drained and cooled
2 -3 three hard boiled eggs
2 green onions, chopped finely
1 tsp prepared mustard
3 radishes
salt and pepper to taste
mayonnaise

Directions:
Directions:
Boil potatoes in salted water. Drain and when cool refrigerate till cold. (best results are overnight). Dice potatoes in large mixing bowl. Add diced hard boiled eggs, chopped onion, and mustard. Zest three radishes and add to mixture. Mix together add salt, pepper and mayonnaise to desired taste and texture. This may be served immediately, but flavour is much nicer when served the following day.
