Eggs well beaten with bit of salt and pepper
2 types of cheese grated
meat - bacon, ham, sausage, tri tip
vegs- tomato, mushroom, pepper, onion,anything in refrigerator

Directions:
Directions:
Heat bacon grease (or butter) in pan. Beat eggs well and salt and
pepper to taste. Pour egg into pan. Place cheese, meat and
vegs on one side of pan. When eggs are slightly brown fold.
Overcooking is the most common mistake.

Ted would make these at family gathers, often cooking 20 - 30
omelets in a morning. These are wonderful with country
potatoes.
