1 1/2 lbs. stew meat, cut into 1" cubes
1/3 c. flour
1/4 c. oil
1/4 c. chopped onions
1 clove garlic, optional
3 c. good quality beef broth
1 tsp. salt
1/2 tsp. Worcestershire sauce
1/4 tsp. pepper
6 potatoes, peeled and cubed
8 carrots, peeled and sliced

Coat meat with flour. On medium-high heat, brown meat in oil. Remove meat when thoroughly browned. Reduce heat to medium. Add onion and garlic to drippings and cook about 3 minutes until onion is tender. Stir in remaining flour until blended. Gradually stir in the water, beef bouillon, salt and pepper, stirring constantly until slightly thick. Add meat and heat to boiling. Reduce heat to low. Cover and simmer 2 1/2 hours until meat is almost fork-tender. Add carrots and potatoes. Boil, cover and simmer 20 minutes until tender.
