1 large onion chopped
3 large zucchini or 5 small chopped
1to 2 tablespoon olive oil
salt and pepper to taste
2 cans chicken broth
1 cup sour cream
1/2 teaspoon oregano

Directions:
Directions:
saute chopped onion and zucchini in olive oil, for about 10 min or until onion is soft. add chicken broth bring to boil and simmer for 20 to 30 min. remove from heat, blend soup with hand held blender or food processor until smooth and well blended,,,
add oregano to cup of sour cream,,, place a dollop of sour cream in bowl of soup when serving...
