3 eggs, beaten
1c. brown sugar
1 c. white sugar
1 c. canola oil

Mix well.

Add:
2 c. grated zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
tsp. baking powder

Bake at 350 for about 55-60 minutes or until toothpick inserted in middle comes out clean. For chocolate zucchini bread, add 1 T. cocoa with dry ingredients.
