1 quart (4 cups) peeled, diced potatoes
1 ½ tsp. salt
¼ tsp. pepper
½ cup chopped onion
1 ½ cup cheddar cheese, shredded
¼ cup butter
3 cups hot milk
3 tbsp. flour
3-4 slices bacon

Directions:
Directions:
Cook potatoes, salt and pepper in 2 cups water in a smaller pot. Meanwhile, cut up bacon and sauté with onion in the soup pot. Drain grease. Add butter, melt. Add flour and stir good. Add milk and stir until think and creamy. Add cooked potatoes and water. Stir in cheese until melted.
