1 lb. boneless, skinless chicken breasts, cut in stips
2 tbsp. oil
1 pkg. (1.25 oz) taco seasoning mix
1 can (14.5 oz) diced tomatoes
˝ cup apricot or peach preserves

Directions:
Directions:
Empty taco mix into a plastic bag. Add chicken and toss to coat.
In a large skillet, heat oil over medium heat. Add chicken and sauté 5-7 minutes or until done.
Stir in tomatoes and preserve. Cover and simmer 10 minutes.
*Serve over cooked white rice
