6 cups cooked chopped beets
5c.white sugar
2c.white vinegar
1 tsp. pickling salt
2 envelopes of gelatin

Directions:
Directions:
Cook beets and skin. Chop in food processor coarsely.
Boil beets, sugar ,vinegar and salt for 20 min.
Add gelatin that has been dissolved in 1/2 c.cold water..
Stir. Boil another 3 minutes.
Pour into sterilzed jars and seal.

You may add horse radish to beet relish just before serving it to your family. PS. I also wear rubber gloves to peel beets, It does get a little messy but is delicious .Yvonne
