2 1/4 c. flour, 1/2 c. powdered sugar, 1 c. butter, 4 eggs, 1/2 tsp. baking powder, 1/2 c. sugar, 1/4 c. fresh lemon juice, 1 T. plus 1 tsp. grated lemon zest, 1/2 vanilla extract, 1/2 c. frozen orange juice concentrate thawed.

Preheat oven to 350. In a medium bowl, stir together 2 cups flour and 1/4 cup plus 2 T. powdered sugar. Cut the butter into the mixture until it is crumbly. Pat the dough into a 15x10 inch nonstick baking pan. Bake the crust until set (10-15 minutes).

In a medium bowl, beat the egg with the remaining 1/4 c. flour, the baking powder, sugar, orange juice concentrate, lemon juice, lemon zest and vanilla.

Pour the egg mixture over the hot crust and bake until the top is set, (12-15 minutes). Cool, then sprinkle with the remaining 2 T. powdered sugar and cut into squares.

This is a nice contrast to chocolate desserts for buffets and pot lucks. We contributed these to many soccer parties and school potlucks.
