For Crepes: 3 beaten eggs, 1-1/2 c. all purpose flour, 1-1/2 c. milk, 1/3 c. unsalted butter, melted, 1/4tsp. salt, 1/4tsp pepper
For Yogurt Filling: 1 c. granola, 1c. vanilla low fat vanilla yogurt, 1/4tsp. ground cinnamon
For Sweet Cheese Filling: 8oz. mascarpone cheese, 1T. honey, 1T. milk, 1/2 tsp. finely shredded lemon peel and 1/4tsp. anise seed (if like)
Variety of fresh fruit sliced such as raspberries, bananas, kiwi, strawberries, blueberries.....

For Crepes: In a large bowl combine eggs, flour, milk, melted butter, salt and pepper. Beat with whisk until well mixed. Cover and refrigerate for 15-30 minutes. After chilled, heat a lightly greased 10" skillet over medium heat. Remove from heat. Ladle 1/2 c. of batter onto pan. Lift and tilt pan to spread batter. Return to heat and cook until bottom is light brown. Remove onto paper towel. Repeat with remaining batter, greasing pan occasionally.
For Yogurt Filling: Mix together granola, yogurt and cinnamon.
For Sweet Cheese Filling: Mix together mascarpone cheese, honey, milk, lemon peel, and anise seed.
To assemble: On top of crepe add filling of choice and fresh fruit and fold up.
