2-1/2 lbs. flank steak (edges trimmed)
1 tsp. salt
1/4 tsp. mustard
1/8 tsp. paprika
1 tsp. Worcestershire sauce

1/4 cup butter
2 T. chopped onion
1 cup bread crumbs
1/4 tsp. salt
Pinch of paprika
2 T. chopped parsley
3 T. chopped celery
1 egg, slightly beaten

3 T. oil
2 T. flour
1 cup water or stock (bouillion cube)
1 cup dry red wine
1/4 tsp. salt

Directions:
Directions:
Combine the salt, paprika, mustard, and Worcestershire sauce, and pound into flank steak. Melt the butter and saute the onion and crumbs until brown. Add the remaining ingredients. Spread this dressing misture over the flank steak, roll it loosely, and tie. Heat oil in skillet and sear steak on all sides. Remove steak and place in casserole dish. Add flour water or stock, wine, and salt to the oil in the skillet. Pour the mixture over the steak and bake, covered, at 350 for 1-1/2 hours.
