5 c. cooked sliced potatoes, 1/3 c. vinegar, 8 slices of bacon diced, 1/4 c. chopped onion, 1 T. flour, 1 T. sugar, 1 1/2 tsp. salt, 1/8 tsp. pepper, 1/4 c. water. Parsley and 1/2 tsp. celery seed garnish the top.

Fry bacon till crisp. Add onion and cook 1 minute. Blend in sugar, salt, pepper and flour and add vinegar and water. Cook and stir until thick. Pour vinegar mixture over potatoes. Mix and serve warm. Sprinkle with parsley and celery seed.

This is from a long time neighbor friend on Valley Street and Vern Court in Dodgeville. She told me that it is the "real deal", as it was given to her from Esther Instefjord.
