3 chicken breasts
1 1/2 cups long grain rice (uncooked)
2 cans creamed soup ( broccoli, mushroon, chicken or celery)
1/2 cup mayo
2 tsp lemon juice
1 head of broccoli (or 1/2 broccoli or 1/2 cauliflower)

Directions:
Directions:
Cut chicken into chunks and cook with olive oil.
Add veggies and 1/2 c. water to steam.
Meanwhile, cook rice (per package instructions).
In bowl, mix soup, mayo, lemon juice, and add to cooked rice. Fill lightly greased casserole dish with veggies and chicken and then add rice.
Top with grated cheese.
Bake for 1 hr at 350
