1 large egg plant
2 beaten eggs
Box of Salt
salt and pepper (I prefer white pepper)
Italian bread crumbs
Crisco Vegetable oil

Directions:
Directions:
Peel egg plant and slice medium thin. Place in salt water. Let stand for 10 minutes. Water will get very brown. Remove water and rinse. Add more water and salt. Repeat above procedure 2-3 times until water comes out clear, no longer brown. This removes all bitterness from vegetable.
Now rinse egg plant well. Place egg plant in beaten egg, than add to bread crumbs, press well, and press again!
Fry eggplant in hot oil until browned. DO NOT crowd them in skillet, will take longer but egg plant will NOT be greasy. Trust me! As you remove them from skillet, add more to skillet and place removed ones in double paper towels, remove from those towels and place in clean towels before placing in serving platter. Your egg plant will be perfectly crisp and not greasy if not crowded in skillet and if given all this TLC while working with them.

I discovered this method by accident. I do not like anything greasy. My sister still asks me to make her my special egg plant on her Birthdays as my nephew always did before his passing. Pete! this one's for you.
