3 egg whites + 1 whole egg (or 4 whites and one yolk)
extra virgin olive oil
minced garlic
1/2 onion (white or red)
1/3 green and/or red pepper
small serv ing of tempah, diced

start by pouring a couple tablespoons extra virgin olive oil into
a small fry pan (i prefer Newman's Own organic extra virgin
oil). heat the oil up on low to medium heat. add garlic and
saute. by the time you chop up your onion, it's time to ad it into
your oil and garlic mix. follow the same Zen way with your
green and/or red peppers. chop up a small piece of tempah
and add it to your saute too. stir frequently and about the time
you see the vegies become clear and the tempah begin to
brown, add your egg (beaten up mix o one whole and three
whites). stir quickly so egg mixes in with all ingredients, then
turn to low heat and let it sit. after drinking a glass of delicious
distilled water, add a small bit of cheese ( i use non-fat
cheddar) to the top of your Omelet. let slow kick until firm and
slightly browned. cheese will have mixed in and what you will
have is a delicious tortilla (spanish word for the yummy
Omelets they have as tapas*). Enjoy.

this delicious and nutritious meal is great for breakfast or a
bedtime snack. taste great, less feeling and will leave you
strong for all you need to do while contributing to your total
lean and mean blackbelt lifestyle. Tapas (pronounced TAH-
pas) is the name for a wide variety of appetizers in Spanish
cuisine. they are sometimes served with a drink before
dinner. skip the drink and dinner and have this one as a meal
for the lean and mean choice we have discussed. :)
