Corned Beef & Potatoes Recipe

1 can corned beef
2 cloves minced garlic
1 tsp. finely chopped ginger
¼ c. chopped onions
5 potatoes, peeled and cubed
3 eggs
¼ - ½ head chopped cabbage
3-4 Tbsp. oil
¼ c. water
4 Tbsp. soy sauce

Heat the oil in wok over medium heat. Add onion, garlic and ginger. Sauté for about 30 seconds. Add potatoes and fry, stirring often, until almost done. Add salt and pepper if desired. Mix the corned beef and eggs in a bowl. Add the corned beef and eggs. At this point, it looks undesirable, but it looks are not everything! Continue stirring. Let the corned beef and eggs cooks through. Add the cabbage. Add the water and soy sauce and bring to a boil. Simmer until done. Serve over rice.
*To kick it up a notch, also add one, diced serrano chili with the onions, garlic and ginger.
