Ingredients:  
1 C. buckwheat flour
1 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
1 T. granulated sugar
1 egg, well beaten
2 C. sour milk
2 T. melted butter


Directions:
Directions:
Mix dry ingredients together with whisk. In separate bowl, beat egg, beat in sour milk and melted butter. Mix dry ingredients to wet ingredients and stir until blended, but do not over beat. Cook on griddle, flip when browned and bubbles break on surface of pancake. Serve with butter and maple syrup.

Evalina used to make Buckwheat pancakes, but I remember she had a "starter" she used -- like a sour dough starter. I wonder why that recipe is not around.
