1 egg
1 to 1-1/4 C. buttermilk or sour milk
1/2 C. buckwheat flour
1/2 C. all purpose flour
1/2 tsp. baking soda
2 T. sugar
1/2 tsp. salt
2 T. melted butter

Directions:
Directions:
Beat egg with 1 cup buttermilk. Mix flours, baking soda, sugar and salt. Combine both mixtures, stirring only enough to blend, stir in melted butter last and add up to 1/4 cup buttermilk if needed to thin batter (it should be barely thicker than heavy cream).

Lightly butter a griddle over medium heat. Pour out pancakes 6 inches in diameter. When crisp and lightly browned, flip and cook other side. They are best served immediately from the griddle, but if necessary, pancakes may be kept warm on an ovenproof plate in a 175 degree oven. Serve with butter and syrup. Makes six 6" pancakes

Grandma (Evalina) made a lot of buckwheat pancakes when we were kids. They are very very yummy!
