1/4 Cup Butter
1 Cup Flour
1 Cup Milk
3 Eggs
1 Tsp. Salt
1 Tsp. Baking Powder
1 Lb. Monterey Jack Cheese, Grated
2 Pkg. Frozen Spinach, defrosted, chopped and drained

Directions:
Directions:
When ready to serve, preheat oven to 350 degrees.
Melt butter in the bottom of a 9 x13 baking dish or you may eliminate butter all together and spray the dish.
Mix together all ingredients and pour into baking dish.
Bake 35 minutes, or until top is brown and bubbly. Cool 10 minutes and cut into squares or bars and serve warm.

May be frozen uncooked, but the baking time required is longer.

This is so good, it reminds me a bit of a Greek Spinach Pie. But this is much easier and faster to prepare. You can use other cheeses like mozzerella or your own mixture.
