4 Medium Yams or Sweet Potatoes
2 Eggs
1/4 C brown sugar
2 T melted butter
1/2 t salt

1/2 C pecans
1/4 C melted butter
1/4 C brown sugar

1/3 C sugar
1 T corn starch
1/8 t salt
1 t grated orange peel
1 C OJ
1 T lemon juice
2 T butter

Directions:
Directions:
Cook the yams until tender in the microwave. Cool, peel, and mash. Beat in the eggs, brown sugar and salt. Put in a casserole. Arrange pecans on the top and sprinkle with brown sugar and melted butter. Bake in the oven at 375 until set - about 20 minutes.

Cook remaining ingredients in sauce pan until thickened. Serve warm as a sauce over the casserole.
