8-10 lb beef brisket

Directions:
Directions:
Heat oven to 425. Line broiler pan or 9x13 with heavy duty foil, enough to completely warp and seal Brisket. Fold edges to get out of the way. Sear the meat at 425 for 15 to 30 minutes until fat starts to splatter and meat is brown.
Remove from oven and seal the foil tightly around the Brisket. Cook slowly at 325 6-8 hours. Check half way through for tenderness and moisture and add 1/4 cup water if necessary. Slice diagonally against grain
