4 eggs but only 2 yokes
1/4 cup of water
1 medium Tomato (sliced)
4 Fresh mushrooms (cleaned and sliced)
1/2 Pound Low-fat Polish sausage or andouille sausage (sliced)
Low fat cream cheese
Sweet Onion ( chopped)
1/2 Tablespoon of chopped jalapeno peppers
Hot Sauce to taste

Directions:

Preheat a ten inch skillet to a medium heat.
Brown your sliced sausage in skillet first then remove.
Use a quick spray of olive oil to coat pans cooking surface..

Wisk the eggs and water in a bowl.
Pour eggs into skillet and begin to add your other ingredients.

Begin with pieces of cream cheese (be generous) this is the secret ingredient.

Then reintroduce the sausage and the remainder of your ingredients.

Cover with a lid for a few minutes to let the eggs firm some then remove lid and fold over in half for a few more minutes to complete cooking.
Garnish with parsley
