1 C flour
3/4 tsp. salt
1 egg
1 1/4 C milk
1/4 C butter

Directions:
Directions:
Mix flour and salt in a bowl. Add 1/4 C of milk and the egg. Beat gently, adding the rest of the milk, until smooth. Do not over-mix. Let batter sit for 30 minutes. Preheat oven to 425. Put 1 tsp. butter into each of 12 muffin tins. Place in oven til very hot, just a couple of minutes. Carefully add batter to cups, dividing evenly. Bake until puffed and golden brown, about 20 minutes. Don't peek in oven for at least 15 minutes or they will fall. Serve immediately with prime rib.

Mom and I tried several Yorkshire pudding recipes over the years, and usually had it on Christmas Day along with prime rib and all the fixins. This was the best we found, after some bad choices that were flat, greasy, or both!
