4 skinless, boneless chicken breasts halves
2 - 4 Tbs. olive oil (can use up to 4)
1 tsp. seasoning salt
1 1/2 tsp. salt free Cajun seasoning (or regular Italian seasoning)
1 tsp. fresh rosemary (or dried)
1 onion, finely diced

Directions:
1) Preheat oven to 350 degrees
2) Place chicken breasts in 9x13 glass baking dish with a cover. Add oil, salt, and Cajun seasoning. Mix with your hands until chicken pieces are evenly coated. If using fresh rosemary, chop and sprinkle over chicken. If using dried rosemary, crush with hands and sprinkle over chicken. Using your hands again, mix together coating chicken evening. Lay diced onions on top of chicken. Cover dish and bake in the preheated oven until onions are caramelized and the chicken is brown and cooked through (juices run clear), about 25 to 35 minutes.

This recipe came from my brother-in-law who is a gourmet cook. He said he and my sister think this is the best chicken they've ever had! (And they've had plenty!)
