¾ cup nuts, chopped
1 cup pitted dates, chopped
1 ½ tspn. baking soda
½ tspn. salt
2 Tblspns. butter
1 cup boiling water
2 eggs
½ tspn. vanilla
1 cup granulated sugar
1 ½ cups sifted flour

Directions:
Directions:
In a large bowl combine the nuts, dates, soda and salt. Add butter and boiling water. Let stand for 15 minutes. Beat eggs slightly, add vanilla. Stir in sugar and sifted flour. Add this to date mixture. Place in greased pans and bake for one hour at 350 degrees. Test with toothpicks. If it still looks too moist, bake them a little longer.

This is a Christmas treat. I first learned to make this right after I was married. About a week or two before Christmas, I visited my Aunt Lou and Uncle Joe. Liz took care of my Aunt, who suffered with Multiple Sclerosis. Liz loved to bake and she made Date Nut Bread and served it to both Rick and me, when we went to visit, with cream cheese and a cup of hot chocolate. I have been making it ever since! Sometimes I make this recipe and pumpkin bread in mini-loaves, and give them away to neighbors for holiday gifts. Great memory!
