Sweet Potato Cake Recipe

1 1/2 cup Vegetable Oil
2 cup Cugar
4 Egg Yolks
4 T. Warm Water
1 t. Vanilla
2 1/2 cup Flour
2 t. Baking Powder
1/4 t Salt
1 t Cinnamon
1 t nutmeg
1 1/2 cup grated raw Sweet Potatoes
1 cup chopped Pecans
4 Egg Whites-stiffly beaten

Mix all ingredients in order, bolding in egg whites last. Bake in 3 greased and floured layer cake pans. Bake @ 350 for 25-30 min. Cool and spread filling between layers and on top.

Coconut Filling:
1 can Evaporated Milk
1 cup Sugar
1/2 cup Oleo
1 T. Flour
1 t Vanilla
1 cup Coconut

Cook over medium heat, stirring constantly until thick, about 10 min. Stir in coconut and vanilla. Beat until thick.
